Salmon

This summer we were fortunate enough to sign up for a CSS (Community Sponsored Seafood) through Otolith Sustainable Seafood.

Through Otolith, there are different sustainably harvested fish programs you can participant in (Dungeness crab is one) but we went for salmon.  Depending on the harvest, you receive 12 to 15 lbs of salmon for $180 ($12/lb).  We were lucky to have signed up in a good year and we will be receiving 15 lbs of line caught wild salmon from Alaska.  This stuff is full of Omega-3 fats and other nutrients lacking in farm-raised "Atlantic" salmon.  One of additional perks is that we are paying less than retail price for the best quality - salmon similar to this would sell for about $18/lb. at a Whole Foods.  The fish has been cleaned, portioned out, flash frozen at -40 degrees and arrives to us vacuum sealed at our farmer's market.  It's the best!

We are having fun experimenting with different recipes and also enjoying it in avocado rolls and as sashimi.
So far we have received 5 lbs. of Coho, 5 lbs. of King, and will have our last pickup of 3 lbs. of Sockeye and 2 lbs. of Pink in early September. 


The photos below are from a night we decided to keep it simple with salt and pepper and a screaming hot frying pan to get that crispy skin.
